Dates are really healthy and great tasting(unless you hate them). High in dietary fiber(supports weight loss), antioxidants and the essential minerals potassium and magnesium.

a dozen bite-size balls
2c pitted dates (recommend medjool)
1/4c unsweetened coconut flakes
2 tbsp coconut oil, plus more for coating hands
3 tbsp flax meal (optional)
Good amount of coatings: Nuts, coconut flakes, oats, cocoa power, cacao nibs, green tea matcha powder... anything you'd like
- Add all ingredients in a food processor or blender
- Blend 3 to 5 minutes or until dough is smooth
- lightly coat hands with coconut oil. Take bite-size pieces of dough and roll them one-by-one between palms into balls
- roll each ball in coatings and enjoy!
